About Bozena Shiro
Shiro (chickpea flour stew) enriched with tender chunks of beef in berbere sauce.
How to Make Bozena Shiro (Traditional & Healthy Version)
Bozena Shiro is a beloved East African stew, deeply woven into the culinary tapestry of Ethiopia and Eritrea. This non-vegetarian dish harmoniously blends rich, spiced chickpea flour (shiro) with tender chunks of meat, often chicken or beef, resulting in a hearty, protein-rich stew. Traditionally simmered with aromatic spices like berbere and niter kibbeh (spiced clarified butter), Bozena Shiro is enjoyed in homes and restaurants alike, especially during gatherings and special occasions. What makes Bozena Shiro stand out is its unique balance of earthy, nutty flavors from chickpea flour and the robust depth brought in by slow-cooked meat. The stew’s velvety texture and warming spices make it a comforting meal, usually scooped up with injera—a tangy fermented flatbread. Its nutritional profile and adaptability also make it a popular choice for health-conscious eaters seeking authentic African cuisine. Satisfying and easy to prepare, Bozena Shiro is a great introduction to East African stews for international food lovers.
